On the palate, the wine is medium bodied and balanced, offering flavours of stone fruit, lime, and kiwi. It is defined by a steely minerality and a long, fresh finish.
The 2022 vintage is a blend of 50% Sauvignon Blanc and 50% Verdejo, though some bottlings may vary slightly in composition. The grapes are harvested at night to preserve acidity and undergo a cool fermentation followed by 4 to 5 months of aging on the lees to enhance texture. This wine has an ABV of 12.5% and is certified both organic and vegan.
